Preparation
- Preheat the oven to 425°F (220°C).
- In a bowl, mix the minced garlic, lemon juice, olive oil, salt, and pepper.
- Rub this mixture all over the chicken, including under the skin.
- Place the chicken in a roasting pan and scatter fresh herbs and chopped vegetables around it.
Cooking
- Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown.
- Let it rest for 10 minutes before carving.
Notes
Make sure to pat the chicken dry before rubbing the seasonings for crispy skin. Let the chicken rest after roasting to keep the juices inside. Feel free to add your favorite vegetables around the chicken for extra flavor.
