Preparation
- Place the chicken breasts and diced potatoes in the slow cooker.
- In a bowl, mix together the heavy cream, grated Parmesan cheese, minced garlic, salt, pepper, and Italian seasoning.
- Pour the mixture over the chicken and potatoes in the slow cooker.
Cooking
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the potatoes are tender.
- Garnish with parsley before serving.
Notes
Leftovers can be stored in an airtight container in the refrigerator for 3-4 days or frozen for up to 3 months. To thicken the sauce, you can add cornstarch towards the end of cooking.
