  • 4 pieces chicken breasts Boneless and skinless preferred.
  • 4 medium potatoes, diced Cut into uniform sizes.
  • 1 cup heavy cream Can substitute with coconut cream for a dairy-free option.
  • 1 cup grated Parmesan cheese Use nutritional yeast for dairy-free option.
  • 4 cloves garlic, minced Adjust amount to taste.
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon Italian seasoning
  • as needed garnish Parsley For garnish before serving.

Method
 

Preparation
  1. Place the chicken breasts and diced potatoes in the slow cooker.
  2. In a bowl, mix together the heavy cream, grated Parmesan cheese, minced garlic, salt, pepper, and Italian seasoning.
  3. Pour the mixture over the chicken and potatoes in the slow cooker.
Cooking
  1. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the potatoes are tender.
  2. Garnish with parsley before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for 3-4 days or frozen for up to 3 months. To thicken the sauce, you can add cornstarch towards the end of cooking.
