Preparation
  1. Place the chicken breasts in the crockpot.
  2. Add the halved baby potatoes around the chicken.
  3. In a bowl, mix together the garlic, chicken broth, heavy cream, Parmesan cheese, Italian seasoning, salt, and pepper.
  4. Pour the mixture over the chicken and potatoes.
  5. Cover and cook on low for 360 minutes (6-8 hours) or high for 240 minutes (3-4 hours) until the chicken is tender and cooked through.
Serving
  1. Serve hot, garnished with chopped parsley.

Notes

For added flavor, sear the chicken in a skillet for a few minutes before putting it in the crockpot. You can add other vegetables like carrots or green beans for extra nutrition. Adjust the seasoning according to your taste; feel free to add more or less salt and pepper.
