  • 4 pieces boneless, skinless chicken breasts
  • 4 cups diced potatoes
  • 1 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons chopped parsley for garnish

Preparation
  1. Place the diced potatoes in the bottom of the slow cooker.
  2. In a bowl, mix together the Parmesan cheese, heavy cream, minced garlic, salt, pepper, and Italian seasoning.
  3. Pour this mixture over the potatoes.
  4. Place the chicken breasts on top of the cheese mixture.
Cooking
  1. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and tender.
Serving
  1. Garnish with chopped parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. You can also freeze leftovers for longer storage. Adjust seasoning according to taste, and consider adding vegetables for extra flavor.
