Preparation
- Place the diced potatoes in the bottom of the slow cooker.
- In a bowl, mix together the Parmesan cheese, heavy cream, minced garlic, salt, pepper, and Italian seasoning.
- Pour this mixture over the potatoes.
- Place the chicken breasts on top of the cheese mixture.
Cooking
- Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and tender.
Serving
- Garnish with chopped parsley before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. You can also freeze leftovers for longer storage. Adjust seasoning according to taste, and consider adding vegetables for extra flavor.
