Ingredients
  

For the chicken
  • 2 pieces chicken breasts Boneless and skinless
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice Freshly squeezed
  • Salt and pepper To taste
For the grain
  • 1 cup quinoa or rice Cooked according to package instructions
For the vegetables
  • 1 piece cucumber Chopped
  • 1 cup cherry tomatoes Halved
  • 1/2 piece red onion Chopped
  • 1 piece bell pepper Chopped
For the tzatziki sauce
  • 1 cup Greek yogurt
  • 1 clove garlic Minced
  • 1 tablespoon lemon juice Freshly squeezed
  • Salt and pepper To taste
For garnish
  • Fresh herbs (parsley, dill, or mint) For garnish

Method
 

Marinating Chicken
  1. Marinate the chicken breasts in olive oil, lemon juice, salt, and pepper for at least 30 minutes.
Grilling Chicken
  1. Grill the chicken over medium heat until cooked through, about 6-7 minutes per side.
Preparing Grains
  1. Cook quinoa or rice according to package instructions.
Chopping Vegetables
  1. Chop the cucumber, cherry tomatoes, red onion, and bell pepper into bite-sized pieces.
Making Tzatziki Sauce
  1. In a bowl, mix the Greek yogurt, minced garlic, diced cucumber, lemon juice, salt, and pepper.
Assembling Bowls
  1. Once the chicken is cooked, slice it and layer it in bowls with quinoa or rice, fresh veggies, and tzatziki sauce on top.
  2. Garnish with fresh herbs and serve.

Notes

Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F for safe eating. Prepare the tzatziki sauce ahead of time and let it chill in the fridge to enhance the flavors. Customize your bowl by adding other vegetables like olives, artichokes, or spinach.
