Ingredients
  

For the marinade
  • 1/4 cup olive oil adds depth and moisture

For the chicken
  • 4 pieces boneless, skinless chicken breasts juicy and lean, perfect protein base
  • 1/2 cup crumbled feta cheese provides a luscious contrast to the chicken
  • to taste fresh parsley for garnish adds a beautiful finishing touch

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
Marinate the Chicken
  1. Place the chicken breasts in a baking dish.
  2. Pour the marinade over the chicken, making sure each piece is well coated.
  3. Let it marinate for at least 30 minutes, or up to a few hours if you have time.
Cooking
  1. Bake the chicken in the preheated oven for 25-30 minutes, or until the chicken is cooked through and has an internal temperature of 165°F (75°C).
  2. About 5 minutes before it’s done, sprinkle the crumbled feta cheese on top and return it to the oven to melt slightly.
Finishing Touch
  1. Once the chicken is cooked, take it out, let it rest for a few minutes, then garnish with fresh parsley before serving.

Notes

For extra flavor, marinate the chicken overnight. If desired, add some red pepper flakes to the marinade for heat. Ensure that you don’t overcook the chicken to keep it juicy. Store leftovers in an airtight container in the refrigerator for up to 3 days.
