  • 4 pieces boneless, skinless chicken breasts or thighs Thighs are juicier option.
  • 3 tablespoons olive oil
  • 2 pieces lemons, juiced (about 1/4 cup)
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon honey (optional) for a touch of sweetness
  • 1 tablespoon red wine vinegar (optional) for extra tang
  • to taste Fresh parsley, chopped for serving
  • as needed Lemon wedges for serving
  • as needed Feta cheese, crumbled (optional) for serving

Method
 

Grilling
  1. Preheat your grill or grill pan over medium-high heat.
  2. Lightly grease the grates with olive oil or non-stick spray.
  3. Place the marinated chicken on the grill and cook for 5-7 minutes on each side, flipping only once.
  4. Ensure the chicken reaches an internal temperature of 165°F (74°C).
  5. Once done, remove from the grill and let it rest for a few minutes.
Baking
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or lightly grease it with olive oil.
  3. Arrange the marinated chicken on the baking sheet.
  4. Bake for 20-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  5. Let the chicken rest for a few minutes before serving.

Notes

Marinate the chicken for at least an hour for enhanced flavor. Use a meat thermometer to check for doneness. Experiment with fresh herbs for bolder taste. For a one-pan meal, add veggies like bell peppers or zucchini.
