Preparation
- In a bowl, whisk together olive oil, lemon juice, garlic, paprika, salt, and pepper.
- Place chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes.
Cooking
- Preheat the grill to medium-high heat.
- Remove chicken from the marinade and discard the marinade.
- Grill chicken for 6-7 minutes on each side or until fully cooked and juices run clear.
- Brush with BBQ sauce during the last few minutes of cooking if desired.
- Remove from the grill, let rest for a few minutes, then slice and serve.
Notes
To make the chicken even more tender, try pounding the chicken breasts to an even thickness before marinating. Let the chicken rest after grilling to keep it juicy. Add herbs like rosemary or thyme to the marinade for extra flavor. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
