  • 4 pieces boneless, skinless chicken breasts
  • 1 cup salsa verde
  • 1 cup shredded pepper jack cheese
  • 1/4 cup fresh cilantro, chopped
  • 1 piece lime, juiced

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. Rub the chicken breasts with olive oil and season with salt and pepper.
Cooking
  1. Grill the chicken for 6-7 minutes on each side, or until fully cooked.
  2. In the last few minutes of grilling, top each chicken breast with salsa verde and shredded pepper jack cheese.
  3. Close the grill lid to melt the cheese.
  4. Remove from the grill and garnish with fresh cilantro and a squeeze of lime.

Notes

Make sure to let the chicken rest for a few minutes after grilling to keep it juicy. If you like extra heat, add jalapeƱos to the salsa verde or mix in some spicy seasonings before grilling. Feel free to customize the toppings like avocado, diced tomatoes, or a dollop of sour cream.
