Method
 

Cooking Steps
  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and garlic, and sauté until translucent.
  3. Add ground chicken, season with salt and pepper, and cook until browned.
  4. Stir in the orzo and chicken broth; bring to a boil.
  5. Reduce heat and simmer until orzo is cooked, about 10 minutes.
  6. Stir in chopped spinach until wilted.
  7. Serve hot, topped with Parmesan cheese.

Notes

For added nutrition, you can include other vegetables like bell peppers or zucchini. To spice it up, add red pepper flakes. For a vegetarian version, substitute ground chicken with cooked lentils or chickpeas.
