Ingredients
  

Chicken and Marinade
  • 2 pieces chicken breasts Lean protein source
  • 2 tablespoons olive oil For marinating chicken
  • 3 cloves garlic, minced Adds flavor to the marinade
  • 2 pieces lemons, juiced Provides acidity and flavor
  • Salt and pepper to taste For seasoning
Grains and Vegetables
  • 1 cup quinoa or brown rice Base of the meal prep bowls
  • 2 cups broccoli florets Healthy vegetable addition
  • 1 cup cherry tomatoes, halved Fresh topping
  • 1/4 cup fresh parsley, chopped For garnish and added freshness

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the olive oil, minced garlic, lemon juice, salt, and pepper.
  3. Marinate the chicken breasts in the mixture for at least 20 minutes.
  4. Cook quinoa or brown rice according to package instructions.
Cooking
  1. Place the marinated chicken on a baking sheet and roast for 25-30 minutes, or until cooked through.
  2. In the last 10 minutes of cooking, add the broccoli florets to the baking sheet.
Assembly
  1. Once everything is cooked, slice the chicken and divide it into meal prep bowls with quinoa or rice, roasted broccoli, and cherry tomatoes.
  2. Garnish with fresh parsley and enjoy!

Notes

Store in airtight containers for up to 4 days in the fridge, or freeze for up to 3 months. Can be served warm or at room temperature.
