- In a bowl, mix together the shredded chicken, Greek yogurt, ranch seasoning, and Laughing Cow cheese until combined.
- Heat a skillet over medium heat and spray with cooking spray or add a small amount of oil.
Cooking
- Place the low-carb tortilla in the skillet and spread the chicken mixture evenly over one half of the tortilla.
- Fold the tortilla over and cook for 3-4 minutes on each side or until golden brown and crispy.
- Remove from heat, slice, and serve warm.
Notes
Serve hot, sliced into wedges. Pairs nicely with fresh vegetables, salsa, or extra Greek yogurt for dipping. Leftovers can be stored in the refrigerator for up to 2 days.
