Preparation
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground beef and onion over medium heat until the beef is browned and the onion is translucent. Drain excess grease.
- In a greased 9x13 inch baking dish, layer half of the sliced potatoes.
- Spread the cooked ground beef mixture over the potatoes.
- If using, add the mixed vegetables on top of the beef.
- Layer the remaining potatoes on top.
- Pour the cream of mushroom soup over the layers and spread evenly.
- Sprinkle with salt and pepper, then top with shredded cheese.
- Cover with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
- Let it cool slightly before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Can be frozen for 2 to 3 months; thaw overnight in the fridge before reheating.
