  • 2 cups cooked chicken, shredded Use rotisserie chicken for extra flavor.
  • 1 cup cooked pasta (penne or rotini) Feel free to switch pasta types.
  • 1 cup spinach, chopped Add other vegetables like bell peppers or zucchini for variety.
  • 1 cup cherry tomatoes, halved Adds a lovely touch.
  • 1 cup mozzarella cheese, shredded Use different cheeses based on preference.
  • 1/2 cup Parmesan cheese, grated
  • 1 cup Alfredo sauce Can substitute with marinara or homemade cheese sauce.
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil or cooking spray for greasing

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cooked pasta, spinach, cherry tomatoes, mozzarella cheese, Parmesan cheese, Alfredo sauce, Italian seasoning, salt, and pepper.
  3. Mix until everything is well combined.
  4. Grease a baking dish with olive oil or cooking spray.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
Baking
  1. Bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
  2. Allow to cool slightly before serving.

Notes

Serve warm with a side salad or garlic bread. For extra flavor, sprinkle fresh basil or parsley on top before serving. Allow leftovers to cool completely before storing in the refrigerator for 3-4 days, or freeze for up to 2 months.
