  • 1 whole Whole chicken, cut into pieces
  • 2 cups Buttermilk
  • 2 tablespoons Hot sauce
For the coating
  • 1 cup All-purpose flour
  • 1 cup Cornstarch
  • 2 teaspoons Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Black pepper
  • 1 teaspoon Cayenne pepper
  • 1 teaspoon Salt
For frying

Method
 

Marinating
  1. In a large bowl, combine buttermilk and hot sauce. Add chicken pieces, cover, and marinate in the refrigerator for at least 4 hours or overnight.
Coating
  1. In another bowl, mix flour, cornstarch, paprika, garlic powder, onion powder, black pepper, cayenne, and salt.
  2. Remove chicken from marinade and let excess drip off. Dredge in the flour mixture, ensuring a good coating.
Frying
  1. Heat oil in a large pan over medium-high heat to 350°F (175°C).
  2. Fry the chicken in batches until golden brown and cooked through, about 15 minutes per side.
  3. Drain on paper towels and serve warm.
