Method

Marinating the Chicken
  1. In a bowl, mix together honey, lime juice, lime zest, minced garlic, cumin, salt, and black pepper to create your marinade.
  2. Place the chicken breasts in the marinade and let them soak for at least 15 minutes; longer marinating enhances flavor.
Cooking the Rice
  1. In a medium saucepan, combine the jasmine rice and chicken broth. Cook according to package instructions until the rice is fluffy.
Cooking the Chicken
  1. While the rice cooks, heat a grill pan or skillet over medium-high heat.
  2. Add the marinated chicken breasts and cook for about 6-7 minutes on each side or until fully cooked.
Preparing the Avocado Topping
  1. In a separate bowl, combine diced avocado, red onion, cilantro, olive oil, and a pinch of salt. Mix well to create your avocado topping.
Assembling the Stack
  1. Once the chicken and rice are ready, assemble your stack by starting with a layer of rice, topping it with sliced chicken, and finishing with the avocado mixture.
  2. Serve each plate with a lime wedge on the side for an extra burst of flavor.

Notes

For extra depth of flavor, let the chicken marinate overnight. Adjust the spice level with a pinch of chili powder or cayenne in the marinade. For quicker preparation, a pressure cooker can be used for the rice.
