Ingredients
  

For the chicken
  • 1 lb chicken breast
  • 2 tablespoons hot honey
  • Salt and pepper to taste
For the bowls
  • 2 cups cooked brown rice or quinoa
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, canned or frozen
  • 1 avocado, sliced
  • 2 cups mixed greens
  • Lime wedges for serving

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper.
  3. Place the chicken on a baking sheet and drizzle with hot honey.
  4. Bake for 20-25 minutes, until the chicken is cooked through.
Assembly
  1. While the chicken is baking, prepare the bowls by layering the brown rice or quinoa, black beans, corn, and mixed greens in each bowl.
  2. Once the chicken is done, let it rest for a few minutes before slicing it.
  3. Top each bowl with slices of chicken and avocado.
  4. Serve with lime wedges on the side.

Notes

For extra flavor, marinate the chicken in hot honey for a few hours before baking. Use leftover chicken for a quick meal later. You can customize the bowls with additional toppings like diced tomatoes, cheese, or extra hot honey.
