  • 2 cups orzo pasta
  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup diced tomatoes
  • 1 teaspoon dried oregano

Method
 

Preparation
  1. Set the Instant Pot to 'Sauté' mode and heat the olive oil.
  2. Add the diced onion and sauté until translucent.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the chicken breasts to the pot, seasoning with salt, pepper, and oregano.
  5. Pour in the chicken broth and diced tomatoes, then add the orzo.
Cooking
  1. Seal the Instant Pot and cook on high pressure for 8 minutes.
  2. Once done, perform a quick release of the pressure.
  3. Shred the chicken with two forks, stir everything together, and adjust seasoning if necessary.
Serving
  1. Serve hot, garnished with fresh parsley or basil.

Notes

Make sure to use enough liquid, as the orzo will absorb a lot while cooking. Feel free to add in vegetables like spinach or peas for extra nutrition and color. Adjust the seasoning to your taste; you can add more herbs or spices if you like.
