Preparation
- Set the Instant Pot to 'Sauté' mode and heat the olive oil.

- Pour in the chicken broth and diced tomatoes, then add the orzo.
Cooking
- Seal the Instant Pot and cook on high pressure for 8 minutes.
- Once done, perform a quick release of the pressure.
- Shred the chicken with two forks, stir everything together, and adjust seasoning if necessary.
Serving
- Serve hot, garnished with fresh parsley or basil.
Notes
Make sure to use enough liquid, as the orzo will absorb a lot while cooking. Feel free to add in vegetables like spinach or peas for extra nutrition and color. Adjust the seasoning to your taste; you can add more herbs or spices if you like.
