  • 4 pieces boneless, skinless chicken breasts
  • 1 cup cream cheese, softened Make sure cream cheese is softened for better mixing.
  • 1 cup shredded cheddar cheese
  • 1 cup chopped jalapeños Can use fresh or pickled, adjust quantity for desired spiciness.
Seasoning and Toppings
  • 1/2 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for drizzling

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the cream cheese, shredded cheddar cheese, chopped jalapeños, garlic powder, onion powder, salt, and pepper.
  3. Spread the cheese mixture over the chicken breasts in a baking dish.
  4. Sprinkle the breadcrumbs on top and drizzle with olive oil.
Baking
  1. Bake for 25-30 minutes or until the chicken is cooked through and the cheese is bubbly and golden.
  2. Serve hot.

Notes

Serve with rice, quinoa, or a fresh salad. It also goes well with tortilla chips. To store leftovers, let cool completely, then place in an airtight container in the refrigerator for 3-4 days. Reheat in the oven or microwave.
