  • 1 pound beef (chuck or brisket), sliced Slice the beef against the grain for better texture.
  • 4 cups beef broth
  • 2 cups noodles (your choice) Can use rice noodles, egg noodles, or zoodles for a low-carb option.
  • 1 cup carrots, sliced
  • 1 cup bell peppers, sliced Customize with other vegetables like mushrooms or zucchini.
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Green onions for garnish

Method
 

Preparation
  1. In a slow cooker, combine sliced beef, beef broth, soy sauce, sesame oil, garlic, ginger, and vegetables.
  2. Season with salt and pepper.
Cooking
  1. Cook on low for 6-8 hours or until the beef is tender.
  2. About 30 minutes before serving, cook the noodles according to package instructions.
  3. Drain the noodles and add them to the slow cooker, mixing well.
Serving
  1. Serve hot, garnished with green onions.

Notes

If you have leftovers, let the dish cool to room temperature before storing. Place it in an airtight container and store it in the refrigerator for about 3-4 days. Reheat using microwave or stove; add more beef broth if noodles absorb too much.
