  • 2 pieces lemons (juiced)
  • 2 tablespoons olive oil

Bowls Components
  • 1 cup cooked quinoa or rice Can substitute with brown rice or cauliflower rice
  • 1 piece cucumber (sliced)
  • 1 cup cherry tomatoes (halved)

Method
 

Preparation
  1. In a bowl, mix lemon juice, olive oil, chili powder, garlic powder, salt, and pepper.
  2. Marinate the chicken breasts in the mixture for at least 30 minutes.
Grilling
  1. Preheat the grill to medium-high heat.
  2. Grill the chicken for about 6-8 minutes on each side or until cooked through.
Assembly
  1. Assemble the bowls by adding quinoa or rice, grilled chicken, cucumber, and cherry tomatoes.
  2. Garnish with fresh herbs if desired and serve.
