Potatoes and Toppings
  • 2 large large potatoes Choose russet potatoes for best results.
  • 1 lb steak (sirloin or ribeye) Select a good cut of steak for best flavor.
  • 1 cup shredded cheese (cheddar or your choice) Feel free to experiment with different types of cheese.
  • 1/2 cup sour cream Can be substituted with Greek yogurt for a healthier option.
  • 2 tablespoons butter
  • to taste Salt and pepper
  • Chopped green onions for garnish Add more to taste.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then microwave for about 5-7 minutes until tender.
  3. In a skillet, cook the steak over medium-high heat until your desired doneness. Let it rest, then slice thinly.
  4. Once the potatoes are done, cut them in half and scoop out a small portion of the insides.
  5. Mix the scooped potato with butter, salt, and pepper.
  6. Fill the potato skins with the potato mixture, top with the sliced steak, and sprinkle cheese on top.
  7. Place back in the oven for 10-15 minutes until the cheese is melted.
  8. Remove from oven, add sour cream and green onions before serving.

Notes

Serve warm on a plate. Extra toppings like additional sour cream or more green onions can be added. Pairs well with a simple salad or steamed vegetables. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave, adding a little water for moisture if needed.
