Preparation
- Preheat your oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork, then microwave for about 5-7 minutes until tender.
- In a skillet, cook the steak over medium-high heat until your desired doneness. Let it rest, then slice thinly.
- Once the potatoes are done, cut them in half and scoop out a small portion of the insides.
- Mix the scooped potato with butter, salt, and pepper.
- Fill the potato skins with the potato mixture, top with the sliced steak, and sprinkle cheese on top.
- Place back in the oven for 10-15 minutes until the cheese is melted.
- Remove from oven, add sour cream and green onions before serving.
Notes
Serve warm on a plate. Extra toppings like additional sour cream or more green onions can be added. Pairs well with a simple salad or steamed vegetables. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave, adding a little water for moisture if needed.
