Pasta
  • 2 cups elbow macaroni
Cheese Sauce
  • 2 cups shredded cheese (cheddar recommended) Feel free to use a mix of cheeses for more flavor.
  • 1 cup milk Adjust for creaminess.
  • 1/4 cup butter Melted before mixing.
  • 2 tablespoons flour Used to thicken the sauce.
  • to taste salt and pepper Adjust according to preference.
  • optional breadcrumbs for topping Add for a crunchy topping.

Method
 

Preparation
  1. Cook the macaroni according to package instructions. Drain and set aside.
  2. In a saucepan, melt the butter over medium heat.
  3. Once melted, whisk in the flour and cook for 1 minute.
  4. Gradually add the milk while continuing to whisk until the mixture thickens.
  5. Stir in the shredded cheese until it is fully melted.
  6. Add salt and pepper to taste.
  7. Combine the drained macaroni with the cheese sauce, mixing well.
Baking
  1. If desired, transfer the mixture to a baking dish and sprinkle breadcrumbs on top.
  2. Bake at 350°F (175°C) for 20 minutes until golden and bubbly.

Notes

Macaroni and cheese is best served warm, garnished with fresh herbs. Pairs well with salad or vegetables. Leftovers can be stored in an airtight container for up to 3 days. Reheat with added milk for creaminess.
