  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Method
 

Cooking
  1. In a large skillet, heat olive oil over medium heat.
  2. Season chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
  3. Add chicken to the skillet and cook until golden brown on both sides, about 5 minutes each side.
  4. Remove chicken from the skillet and set aside.
  5. In the same skillet, add sun-dried tomatoes and chicken broth, stirring to combine.
  6. Stir in heavy cream and bring to a simmer.
  7. Return chicken to the skillet, cover, and simmer on low heat for about 15-20 minutes, or until chicken is cooked through.
  8. Serve warm, garnished with fresh basil.

Notes

For additional flavor, let the chicken marinate in olive oil, garlic powder, and Italian seasoning for an hour before cooking. You can add vegetables like spinach or mushrooms to the sauce for extra nutrients and taste. If you prefer a lighter sauce, you can substitute half-and-half for the heavy cream. This dish can be kept for up to 3 days in the refrigerator.
