  • 1 teaspoon oregano
  • 1 teaspoon garlic powder

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, combine the chicken breasts, cherry tomatoes, zucchini, bell pepper, and onion.
  3. Drizzle with olive oil and sprinkle with oregano, garlic powder, salt, and pepper.
  4. Toss everything together until well coated.
  5. Top with crumbled feta cheese.
Cooking
  1. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.

Notes

If you have leftovers, let the dish cool completely before storing it in an airtight container. You can keep it in the refrigerator for 3 to 4 days. To reheat, place it in the oven at 350°F (175°C) until warmed through. You can also microwave individual portions if you prefer. For extra flavor, marinate the chicken breasts in olive oil, garlic, and herbs for a few hours before baking. You can add other vegetables like eggplant or spinach based on your taste preferences. If you like a bit of heat, sprinkle some crushed red pepper flakes over the dish before baking.
