Preparation of Chicken
- Marinate the chicken by mixing the olive oil, lemon juice, minced garlic, oregano, cumin, salt, and pepper in a bowl.
- Add the chicken pieces to the marinade and coat them well. Let marinate for at least 30 minutes.
Preparation of Tzatziki
- In another bowl, combine Greek yogurt, crumbled feta cheese, grated cucumber, minced garlic, lemon juice, olive oil, salt, and pepper.
- Stir until well combined and set aside.
Cooking the Chicken
- Heat a large skillet over medium-high heat and add the marinated chicken.
- Cook for about 6-8 minutes, or until fully cooked and golden brown, stirring occasionally.
Assembling the Gyros
- Warm the pita bread in a dry skillet or microwave.
- Place some chicken in the center of each pita, then top with tzatziki sauce, red onion, diced tomatoes, and shredded lettuce.
- Fold the pita and serve warm.
Notes
Store leftover chicken and tzatziki sauce separately in the refrigerator for up to 2 days. Pita can also be stored but is best enjoyed fresh.
