Ingredients
  

Marinade
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh dill, chopped
  • to taste Salt and pepper
Main Ingredients
  • 2 pieces boneless, skinless chicken breasts
  • 2 cups mixed fresh vegetables (such as cucumber, bell peppers, and cherry tomatoes)
  • 1 cup cooked quinoa or rice
  • as needed Lemon wedges for serving

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, lemon juice, chopped dill, salt, and pepper.
  3. Marinate the chicken breasts in the mixture for at least 30 minutes.
Cooking
  1. Grill the chicken for about 6-7 minutes on each side or until cooked through.
  2. Slice the chicken once cooked.
Assembly
  1. In a bowl, layer quinoa or rice, grilled chicken, and fresh vegetables.
  2. Drizzle with any remaining dressing and serve with lemon wedges.

Notes

Serve warm with sliced grilled chicken atop quinoa or rice, and enjoy with fresh vegetables. Can be stored in an airtight container in the refrigerator for up to 3 days. Best to reheat chicken and grains before adding fresh vegetables.
