Main Ingredients
  • 4 pieces Chicken pieces Any part of the chicken can be used.
  • 1/2 cup Peanut butter Use smooth peanut butter for best texture.
  • 2 medium Tomatoes, chopped
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 1 inch Ginger, minced
  • 2 cups Chicken broth
  • 1/4 cup Palm oil or vegetable oil
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Black pepper Adjust to taste.
  • 1/4 teaspoon Cayenne pepper or chili, optional Adjust to spice preference.
  • 3 cups Rice or fufu, for serving Use cooked rice or fufu to soak up the sauce.

Method
 

Cooking Steps
  1. In a large pot, heat palm oil or vegetable oil over medium heat.
  2. Add chopped onions, garlic, and ginger; sauté until onions are translucent.
  3. Add chicken pieces and cook until browned on all sides.
  4. Stir in chopped tomatoes, peanut butter, chicken broth, salt, black pepper, and cayenne pepper (if using).
  5. Bring to a boil, then reduce heat and simmer for 30-40 minutes until chicken is cooked through and sauce thickens.
  6. Serve hot with cooked rice or fufu.

Notes

Leftover Moambe Chicken can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze for up to a month.
