Cooking Steps
- In a large pot, heat palm oil or vegetable oil over medium heat.
- Add chopped onions, garlic, and ginger; sauté until onions are translucent.
- Add chicken pieces and cook until browned on all sides.
- Stir in chopped tomatoes, peanut butter, chicken broth, salt, black pepper, and cayenne pepper (if using).
- Bring to a boil, then reduce heat and simmer for 30-40 minutes until chicken is cooked through and sauce thickens.
- Serve hot with cooked rice or fufu.
Notes
Leftover Moambe Chicken can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze for up to a month.
