Preparation
  1. Start by washing and cutting your vegetables.
  2. Slice the kielbasa into bite-sized pieces.
  3. In a bowl, mix the honey, minced garlic, and soy sauce together to create the sauce. Set it aside.
Cooking
  1. Heat olive oil in a large pan over medium heat.
  2. Add the sliced kielbasa and cook until it starts to brown, about 3-4 minutes.
  3. Add the baby potatoes and bell peppers to the pan and stir to combine.
  4. Pour the honey garlic sauce over the mixture and toss everything together.
  5. Add the baby carrots next, cover the pan, and let it cook on medium heat for about 15-20 minutes, stirring occasionally, until the vegetables are tender and the potatoes are cooked through.
  6. Remove from heat and sprinkle freshly chopped parsley or green onions over the top for added flavor and color.

Notes

For added flavor, consider marinating the kielbasa in the sauce for 30 minutes before cooking. Feel free to add in other vegetables you like or need to use up. Adjust the amount of honey to make it sweeter or add a dash of red pepper flakes for a bit of heat.
