  • 1 cup diced tomatoes (canned or fresh) Canned tomatoes can be used for convenience.
  • 1 cup cooked protein (such as chicken, beans, or tofu) This adds protein to the dish.
  • 1 teaspoon olive oil For sautéing the vegetables.
  • 1 teaspoon garlic powder or minced garlic Add according to your taste preference.

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced vegetables and cook for about 3-4 minutes, until they soften.
  3. Stir in the pasta, broth, tomatoes, garlic powder, salt, and pepper.
  4. Bring the mixture to a boil, then reduce the heat to low and cover the pot.
  5. Let it simmer for about 10-12 minutes or until the pasta is cooked and the liquid is mostly absorbed.
  6. Add the cooked protein and mix well.
  7. Serve warm, topping with grated cheese if desired.

Notes

To make it extra creamy, add a splash of cream or milk before serving. You can customize the dish by switching up the vegetables and protein based on your child’s likes.
