Ingredients
  

For the chicken and sauce
  • 1 lb boneless chicken thighs or breasts Use your preferred cut
  • 1 cup orange juice Freshly squeezed preferred
  • 1/2 cup soy sauce Low sodium is an option
  • 1/4 cup honey Adjust sweetness to taste
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons cornstarch For sauce thickening
  • 1 tablespoon vegetable oil For cooking the chicken
For serving
  • 4 cups cooked rice White or brown rice works
  • 2 cups mixed vegetables e.g., broccoli, bell peppers, carrots
  • to taste Salt and pepper
  • Sesame seeds and green onions for garnish (optional)

Method
 

Preparation
  1. In a bowl, mix orange juice, soy sauce, honey, garlic, and ginger.
  2. In a separate small bowl, mix cornstarch with a little water until smooth.
Cooking
  1. Heat vegetable oil in a pan over medium heat.
  2. Add chicken and cook until browned and no longer pink.
  3. Pour the orange sauce mixture over the chicken.
  4. Add the cornstarch mixture to the chicken and cook until sauce thickens and coats the chicken.
  5. Season with salt and pepper to taste.
Serving
  1. Serve chicken over cooked rice with mixed vegetables.
  2. Garnish with sesame seeds and green onions if desired.
  3. Portion into meal prep bowls for easy lunches or dinners.

Notes

Marinate the chicken in the orange sauce for a few hours for more flavor. Use fresh vegetables for the best taste and texture. Adjust the sweetness of the sauce by adding more or less honey, according to your preference.
