  • 1 pound cooked chicken, shredded Can use rotisserie chicken for convenience.
  • 1 cup vegetables (e.g., spinach, bell peppers, peas) Use any preferred or seasonal vegetables.
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat and sauté the garlic until fragrant.
  2. Add the orzo and stir for a couple of minutes.
  3. Pour in the chicken broth and bring it to a boil.
  4. Reduce the heat to low, cover, and simmer for about 10 minutes or until the orzo is cooked al dente.
  5. Stir in the cooked chicken and vegetables, cooking until heated through.
  6. Season with salt and pepper.
  7. Serve hot, garnished with Parmesan cheese if desired.

Notes

Make sure not to overcook the orzo, as it can become mushy. You can mix in different vegetables based on your preference. For added flavor, use homemade chicken broth instead of store-bought.
