Ingredients
  

Marinade
  • 2 lbs chicken thighs, boneless and skinless
  • 1/4 cup olive oil
  • 2 tablespoons garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon ground cinnamon
  • to taste Salt and pepper
  • Juice of 1 lemon
For serving
  • Pita bread or wraps
  • Fresh veggies (lettuce, tomatoes, cucumbers, etc.)
  • Yogurt or tahini sauce for drizzling

Method
 

Preparation
  1. In a large bowl, combine olive oil, garlic, cumin, coriander, paprika, turmeric, cinnamon, salt, pepper, and lemon juice to create a marinade.
  2. Add chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour or overnight for best flavor.
Cooking
  1. Preheat the oven to 425°F (220°C).
  2. Arrange marinated chicken in a single layer on a baking dish.
  3. Bake for 25-30 minutes, or until the chicken is cooked through and slightly charred.
  4. Remove from the oven and let it rest for a few minutes before slicing.
Serving
  1. Serve in pita bread or wraps with fresh veggies and your choice of sauce.

Notes

Marinating the chicken overnight enhances the flavor. Feel free to experiment with different spices and add more veggies or toppings to make it a complete meal.
