Preparation
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels and place it on a roasting pan.
- Rub the skin with olive oil or melted butter, and season generously with salt and black pepper.
- Stuff the cavity of the chicken with lemon wedges, fresh herbs, and garlic cloves if using.
- If desired, place chopped vegetables around the chicken in the roasting pan.
Cooking
- Roast in the preheated oven for about 1 hour and 20 minutes, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10-15 minutes before carving.
Notes
Serve the chicken warm with roasted vegetables, rice, or a fresh salad. Leftovers can be stored in an airtight container for 3-4 days in the refrigerator or frozen for up to 3 months.
