  • 1 whole whole chicken (about 4-5 lbs) Choose organic or free-range for better flavor.
  • Salt To taste.
  • Black pepper To taste.
  • 2 tablespoons Olive oil or melted butter For rubbing the chicken.
  • 1 lemon (cut into wedges) For stuffing inside the chicken.
  • 2-3 sprigs Fresh herbs (like rosemary, thyme, or parsley) To add flavor.
  • 4 cloves Garlic (optional) Can enhance flavor.
  • Vegetables for roasting (like carrots, potatoes, and onions, optional) Can be added for a complete meal.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels and place it on a roasting pan.
  3. Rub the skin with olive oil or melted butter, and season generously with salt and black pepper.
  4. Stuff the cavity of the chicken with lemon wedges, fresh herbs, and garlic cloves if using.
  5. If desired, place chopped vegetables around the chicken in the roasting pan.
Cooking
  1. Roast in the preheated oven for about 1 hour and 20 minutes, or until the internal temperature reaches 165°F (75°C).
  2. Let the chicken rest for 10-15 minutes before carving.

Notes

Serve the chicken warm with roasted vegetables, rice, or a fresh salad. Leftovers can be stored in an airtight container for 3-4 days in the refrigerator or frozen for up to 3 months.
