  • 1 lb chicken breast, diced
  • 1 cup pineapple chunks Fresh or canned (drain canned if using)
  • 1 cup rice White rice preferred
  • 2 cups chicken broth
  • 1 tablespoon soy sauce Additional for marinating if desired
  • 1 tablespoon olive oil
  • 1 medium bell pepper, diced
  • 1 medium onion, diced
  • Salt and pepper to taste
  • Green onions for garnish

Method
 

Cooking Instructions
  1. Heat olive oil in a large pan over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Add the onion and bell pepper and sauté until softened.
  4. Stir in the pineapple chunks, rice, chicken broth, and soy sauce.
  5. Bring to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes or until rice is cooked.
  6. Season with salt and pepper.
  7. Garnish with green onions and serve immediately.

Notes

Serve warm, straight from the pan. Pairs well with fresh salad or steamed vegetables. For longer storage, freeze in portions for up to 2 months.
