Ingredients
  

Main ingredients
  • 3 lb boneless pork shoulder, Boston butt, or pork butt
  • 1/2 cup soy sauce Can substitute with gluten-free soy sauce or coconut aminos
  • 1 1/2 cups chicken broth
  • 1 cup pineapple juice
  • 3/4 cup ketchup
  • 1/4 cup coconut sugar Adjust for sweetness preference
  • 2 tbsp minced garlic
  • 2 tsp ground ginger
  • 1 cup pineapple (chopped)
  • 1 tbsp arrowroot For thickening BBQ sauce
  • to taste Salt and pepper

Method
 

Preparation
  1. In a bowl, mix together the soy sauce, chicken broth, pineapple juice, ketchup, coconut sugar, minced garlic, and ground ginger.
  2. Prepare the pork by trimming excess fat and cutting it into large chunks. Season the meat with salt and pepper.
Cooking
  1. Spray the slow cooker with cooking spray and place the pork into the slow cooker.
  2. Pour the sauce over the pork and slow cook for 8 hours on low.
  3. Once the pork is cooked thoroughly and reaches 145°F in the center, move it to a large bowl and shred the meat using two forks.
BBQ Sauce Instructions
  1. Mix the drippings from the slow cooker with arrowroot and cook on the stove to thicken it into a BBQ sauce to serve with the pulled pork.
Oven Instructions
  1. If desired, you can cook the pork in the oven at 300°F for 4 to 5 hours.
Instant Pot Instructions
  1. For a quicker option, use the Instant Pot and cook on high pressure for about 60 minutes.

Notes

Store leftover pulled pork in an airtight container in the refrigerator for up to 4 days. If you want to keep it longer, you can freeze it for up to 3 months. Be sure to thaw it in the fridge when you're ready to use it.
You can add vegetables such as bell peppers or onions into the slow cooker for added flavor and nutrition. Another option is to use different fruits like mango or peach to change the flavor profile.
