Method
Cooking the Beef
- Heat a skillet over medium-high heat. Add the ground beef, chili powder, cumin, and smoked paprika. Season with salt and pepper. Cook until the beef is no longer pink, about 6 minutes. Drain any excess fat.
Making Cilantro Lime Rice
- In a bowl, combine the cooked rice with lime juice and cilantro. Toss it all together to mix evenly.
Making Quesadillas
- Heat another pan. Place a tortilla in the pan, sprinkle with cheddar cheese, and top with another tortilla. Cook until golden brown, about 2 minutes on each side. Repeat this step for 4 quesadillas.
Assembling Quesaritos
- Lay a quesadilla flat. Layer it with rice, beef, nacho cheese sauce, and sour cream. Roll the quesadilla tightly into a burrito shape. Repeat this with the remaining ingredients.
Cooking the Quesaritos
- Add two Quesaritos to the pan and cook until golden and crispy, about 3-5 minutes on each side. Serve immediately.
Notes
Serve the Quesarito hot with sides like salsa, guacamole, or chips. You can use a mix of cheeses for added flavor or make it vegetarian by substituting ground beef with black beans or lentils.
