Ingredients
  

For the filling
  • 1 lb ground beef Chopped into small pieces for cooking
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Kosher salt To taste
  • Freshly ground black pepper To taste
  • 2 cups cooked white rice Cold or room temperature
  • 1 Tbsp lime juice
  • 2 Tbsp finely chopped cilantro
For the quesadillas
  • 8 large flour tortillas
  • 1 1/2 cups shredded Cheddar
  • 1 cup Nacho Cheese Sauce
  • 1/2 cup sour cream

Method
 

Cooking the Beef
  1. Heat a skillet over medium-high heat. Add the ground beef, chili powder, cumin, and smoked paprika. Season with salt and pepper. Cook until the beef is no longer pink, about 6 minutes. Drain any excess fat.
Making Cilantro Lime Rice
  1. In a bowl, combine the cooked rice with lime juice and cilantro. Toss it all together to mix evenly.
Making Quesadillas
  1. Heat another pan. Place a tortilla in the pan, sprinkle with cheddar cheese, and top with another tortilla. Cook until golden brown, about 2 minutes on each side. Repeat this step for 4 quesadillas.
Assembling Quesaritos
  1. Lay a quesadilla flat. Layer it with rice, beef, nacho cheese sauce, and sour cream. Roll the quesadilla tightly into a burrito shape. Repeat this with the remaining ingredients.
Cooking the Quesaritos
  1. Add two Quesaritos to the pan and cook until golden and crispy, about 3-5 minutes on each side. Serve immediately.

Notes

Serve the Quesarito hot with sides like salsa, guacamole, or chips. You can use a mix of cheeses for added flavor or make it vegetarian by substituting ground beef with black beans or lentils.
