  • 2 pieces cucumbers, sliced Use fresh, firm cucumbers.
  • 1/2 pieces red onion, thinly sliced Adjust amount to taste.
  • 1 cup cherry tomatoes, halved Choose ripe cherry tomatoes.
  • 1/4 cup olives, pitted and sliced Green or black olives can be used.
  • 1/4 cup feta cheese, crumbled Can substitute with goat cheese or mozzarella.
Dressing Ingredients
  • 2 tablespoons olive oil Use extra virgin for best flavor.
  • 1 tablespoon red wine vinegar Can substitute with other types of vinegar.
  • 1 teaspoon dried oregano Fresh oregano can be used for a different flavor.
  • to taste Salt and pepper Adjust seasoning to preference.

Preparation
  1. In a large bowl, combine the sliced cucumbers, red onion, cherry tomatoes, olives, and feta cheese.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes

For a bit of crunch, consider adding bell peppers or radishes. Adjust the dressing ingredients to your taste, and letting the salad chill for at least 30 minutes enhances the flavors.
