  • 1 lb chicken breast, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • to taste Salt and pepper
  • 8 small tortillas
Toppings
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • Fresh parsley for garnish
  • Tzatziki sauce (optional)

Method
 

Cooking
  1. Heat the olive oil in a skillet over medium heat.
  2. Add the diced chicken and season with garlic powder, paprika, oregano, salt, and pepper.
  3. Cook until the chicken is golden and cooked through, about 5-7 minutes.
  4. Warm the tortillas in a separate pan or microwave.
  5. To assemble the tacos, place the cooked chicken in a tortilla and top with cherry tomatoes, cucumber, feta cheese, red onion, and garnish with parsley.
  6. Drizzle with tzatziki sauce if desired.
  7. Serve immediately and enjoy!

Notes

For leftovers, store chicken and toppings separately. Chicken can be refrigerated for up to three days. Reheat in a skillet before serving with warm tortillas.
