- Heat the olive oil in a skillet over medium heat.
- Add the diced chicken and season with garlic powder, paprika, oregano, salt, and pepper.
- Cook until the chicken is golden and cooked through, about 5-7 minutes.
- Warm the tortillas in a separate pan or microwave.
- To assemble the tacos, place the cooked chicken in a tortilla and top with cherry tomatoes, cucumber, feta cheese, red onion, and garnish with parsley.
- Drizzle with tzatziki sauce if desired.
- Serve immediately and enjoy!
Notes
For leftovers, store chicken and toppings separately. Chicken can be refrigerated for up to three days. Reheat in a skillet before serving with warm tortillas.
