Main ingredients
  • 2 lbs chicken thighs or breasts Use either chicken thighs or breasts based on preference.
  • 4 potatoes, diced
  • 4 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth Can substitute with vegetable broth.
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Method
 

Preparation
  1. Heat olive oil in a skillet over medium heat.
  2. Brown the chicken on all sides and then transfer to the slow cooker.
  3. Add the potatoes, carrots, onion, garlic, chicken broth, thyme, and rosemary.
  4. Season with salt and pepper.
  5. Stir to combine.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 4 hours until the chicken and vegetables are tender.
  2. Serve hot and enjoy your hearty dinner!

Notes

For extra flavor, add a splash of white wine to the broth before cooking. If a thicker stew is desired, add a slurry of cornstarch mixed with water during the last hour of cooking. Feel free to customize vegetables based on availability.
