  • 2 pieces boneless, skinless chicken breasts
  • 1 cup spinach, chopped Use fresh spinach for better flavor.
  • 1/2 cup cream cheese, softened
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the spinach, cream cheese, mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper.
  3. Cut a pocket in each chicken breast and stuff it with the cheese mixture.
Cooking
  1. Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  2. Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
  3. Let the chicken rest for a few minutes before slicing and serving.

Notes

Make sure not to overstuff the chicken to prevent it from bursting while cooking. Feel free to add your favorite herbs or spices to the cheese mixture for a personal touch. To store leftovers, place the stuffed chicken in an airtight container. It can be kept in the refrigerator for up to 3 days. To reheat, simply warm it in the oven or microwave until heated through.
