Preparation
  1. Preheat your oven to 375°F (190°C). Slice a pocket into each chicken breast, being careful not to cut all the way through.
  2. In a mixing bowl, combine cream cheese, spinach, mozzarella cheese, garlic powder, and Italian seasoning. Mix until well combined.
  3. Stuff each chicken breast with the cheese mixture and secure the openings with toothpicks if needed.
Cooking
  1. Heat olive oil in a large, oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for about 4-5 minutes on each side until golden brown.
  2. Pour chicken broth and lemon juice over the seared chicken. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
  3. Sprinkle with grated Parmesan cheese before serving.

Notes

Make sure your cream cheese is softened for easier mixing. Do not overstuff the chicken to avoid leakage. Adjust seasoning to taste, adding red pepper flakes for heat if desired. You can switch up the filling by using sun-dried tomatoes, artichoke hearts, or different cheeses.
