Ingredients
  

For the Sauce
  • 4 cloves Garlic cloves Minced
  • 1/4 cup Soy sauce Can substitute with tamari for gluten-free
  • 1/2 cup Chicken broth
  • 2 tablespoons Honey Adjust sweetness to taste
  • 1 tablespoon Cornstarch For thickening the sauce
  • 1/2 teaspoon Salt Adjust to taste
  • 1/4 teaspoon Pepper Adjust to taste
For the Chicken and Rice
  • 4 pieces Chicken breasts Cut into smaller pieces for quicker cooking
  • 2 tablespoons Vegetable oil For cooking the chicken
  • 2 cups Rice Cook according to package instructions
  • 2 stalks Green onions Chopped, for garnish

Method
 

Preparation
  1. In a bowl, mix minced garlic, soy sauce, chicken broth, honey, cornstarch, salt, and pepper to create the sauce.
  2. Cut chicken breasts into smaller pieces for quicker cooking.
Cooking
  1. Heat oil in a pan over medium-high heat.
  2. Add chicken breasts and cook until golden brown.
  3. Pour the sauce over the chicken and let simmer until cooked through.
  4. Meanwhile, cook the rice according to package instructions.
Serving
  1. Place a portion of the fluffy rice on a plate.
  2. Top it with the cooked garlic chicken and drizzle some of the sauce on top.
  3. Finish off by sprinkling chopped green onions for a fresh touch.

Notes

Store leftovers in an airtight container in the fridge for 3 to 4 days. Reheat in the microwave or on the stove until hot. You can customize by adding vegetables or swap rice for quinoa or noodles.
