  • 1 pound boneless chicken or bone-in for flavor
  • 1/4 cup honey can substitute with maple syrup
  • 1/4 cup soy sauce use tamari for gluten-free option
  • 3 cloves garlic fresh minced
  • 2 tablespoons olive oil or canola
  • 1 teaspoon paprika smoked paprika for extra kick
  • 1 teaspoon thyme fresh or dried
  • to taste salt
  • to taste pepper
  • 2 medium sweet potatoes or regular potatoes as substitute
  • 1 cup green beans or roasted broccoli or asparagus

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix the honey, soy sauce, minced garlic, olive oil, paprika, thyme, salt, and pepper. This will be your sauce.
  3. Cut the sweet potatoes into cubes and toss them in the sauce. Spread them on one side of a large baking sheet.
  4. Place the chicken on the other side of the baking sheet. Brush the rest of the sauce over the chicken.
  5. Add the green beans to the baking sheet, drizzling a bit of sauce over them if desired.
  6. Bake everything in the oven for about 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
  7. Serve hot and enjoy your meal!

Notes

For additional flavor, marinate the chicken in the sauce for a few hours or overnight. Feel free to swap in seasonal vegetables like bell peppers, carrots, or zucchini.
