  • 2 tablespoons fresh lemongrass, minced Use fresh lemongrass for the best flavor.
  • 3 cloves garlic, minced
  • 2 tablespoons fish sauce Can be substituted with soy sauce.
  • 2 tablespoons soy sauce
Main ingredients
  • 1.5 pounds chicken thighs Can substitute with chicken breasts for a leaner option.
  • 2 cups pickled vegetables Serve on the side.
  • 2 cups steamed jasmine rice A perfect complement to the dish.

Method
 

Marination
  1. In a bowl, combine minced fresh lemongrass, minced garlic, fish sauce, and soy sauce to create a marinade.
  2. Add the chicken thighs to the marinade and ensure they are fully coated. Allow them to marinate for at least 30 minutes.
Cooking
  1. Preheat your grill or pan over medium heat.
  2. Cook the marinated chicken thighs for about 6-7 minutes on each side, or until they reach a safe internal temperature and have caramelized edges.
Serving
  1. Serve hot with pickled vegetables and steamed jasmine rice.
  2. Garnish with extra lemongrass or cilantro for added color and taste.

Notes

To store leftovers, let the chicken cool completely. Place it in an airtight container and refrigerate for up to 3 days. You can also freeze the chicken for up to 2 months. Reheat in a pan over low heat to keep it juicy. For enhanced flavor, marinate the chicken for a longer time, such as a few hours or overnight. If you like a bit of spice, add some chopped fresh chili to the marinade.
