  • 1 pound salmon fillet, skinless and boneless Use fresh salmon for best taste; previously frozen is acceptable if thawed.
  • 1/2 cup breadcrumbs For an even crispier bite, consider adding a little cornmeal.
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for cooking For frying or baking the bites.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Cut the salmon fillet into bite-sized pieces.
  3. In a bowl, mix the breadcrumbs, Parmesan cheese, parsley, garlic powder, onion powder, salt, and pepper.
  4. Coat each salmon piece in the breadcrumb mixture.
Cooking
  1. Heat olive oil in a skillet over medium-high heat and add the salmon bites.
  2. Cook for about 3-4 minutes on each side until golden and crispy.
  3. Alternatively, place the coated salmon bites on a baking sheet and bake in the oven for 12-15 minutes.
Serving
  1. Serve warm as an appetizer or snack, optionally with a dipping sauce such as tartar sauce, garlic aioli, or lemon juice.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the oven or skillet to maintain crispiness. Experiment with spices like paprika or cayenne for added flavor.
