  • 2 pounds chicken breast Cut into even pieces for uniform cooking.
  • 4 cups broccoli florets
  • 1 cup chicken broth
  • 1/4 cup soy sauce Can substitute with tamari or low-sodium alternative.
  • 2 tablespoons cornstarch Add more for a thicker sauce if desired.
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • to taste Salt and pepper

Method
 

Preparation
  1. Place the chicken breast in the slow cooker.
  2. In a separate bowl, mix together chicken broth, soy sauce, cornstarch, garlic, and ginger.
  3. Pour the mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. About 30 minutes before serving, add the broccoli florets to the slow cooker.
  6. Season with salt and pepper to taste before serving.

Notes

Serve over rice or alongside noodles. Dress up with fresh herbs like cilantro or green onions. Store leftovers in an airtight container for up to three days; freeze for up to two months.
