  • 4 pieces chicken breasts
  • 4 medium potatoes, chopped
  • 2 cups green beans, trimmed
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

  • 2 cups chicken broth
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Add the chopped potatoes and green beans on top of the chicken.
  3. In a small bowl, mix together the minced garlic, thyme, rosemary, salt, pepper, olive oil, and chicken broth.
  4. Pour the garlic-herb broth mixture over the ingredients in the slow cooker.
Cooking
  1. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the vegetables are tender.
Serving
  1. Serve warm and enjoy the hearty meal.

Notes

For extra flavor, marinate the chicken in the garlic and herbs for a few hours before cooking. Add red pepper flakes for heat. Swap out vegetables as desired.
