  • 1 lb ground beef Browned and drained
  • 1 can black beans, drained
  • 2 cups diced potatoes
  • 1 cup shredded cheese
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • Salt and pepper to taste

Method
 

Preparation
  1. In a skillet, brown the ground beef over medium heat. Drain any excess fat.
  2. In the slow cooker, combine the browned beef, black beans, diced potatoes, cheese, diced tomatoes, and taco seasoning.
  3. Stir to mix all the ingredients well and season with salt and pepper.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 3-4 hours.
Serving

Notes

For added flavor, serve with cornbread or a fresh salad, and top with sour cream, avocado slices, or fresh cilantro. To make it spicier, add jalapeƱos or chili powder. For a healthier version, substitute ground beef with ground turkey or vegetables.
