Preparation
- Wash and chop the potatoes into bite-sized pieces.
- In a bowl, toss the chopped potatoes with olive oil, salt, pepper, garlic powder, and paprika.
- Place the seasoned potatoes at the bottom of a slow cooker.
- Season the chicken breasts with salt, pepper, paprika, onion powder, and Italian seasoning.
- Lay the seasoned chicken on top of the potatoes.
- Spread the minced garlic evenly over the chicken.
- Pour enough Buffalo Wild Wings Garlic Parmesan Sauce to coat the chicken thoroughly.
Cooking
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is cooked through and potatoes are tender.
- In the last 30 minutes of cooking, sprinkle shredded mozzarella cheese over the top. Cover and let it melt.
Serving
- Serve warm, garnished with extra Parmesan or herbs if desired.
Notes
Store leftovers in an airtight container in the refrigerator for 3 to 4 days. For longer storage, freeze individual portions and thaw before reheating. You can enhance flavors by marinating the chicken in the garlic parmesan sauce beforehand.
