Ingredients
  

For the chicken and potatoes
  • 1 lb chicken breasts
  • 5 medium-sized potatoes, chopped Chopped into bite-sized pieces
  • 2 tbsp olive oil
  • to taste Salt
  • to taste Pepper
  • to taste Garlic powder
  • 1 tsp paprika For seasoning potatoes
  • 1/2 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 2 tbsp minced garlic
  • enough to coat Buffalo Wild Wings Garlic Parmesan Sauce
  • 1 cup shredded mozzarella cheese

Method
 

Preparation
  1. Wash and chop the potatoes into bite-sized pieces.
  2. In a bowl, toss the chopped potatoes with olive oil, salt, pepper, garlic powder, and paprika.
  3. Place the seasoned potatoes at the bottom of a slow cooker.
  4. Season the chicken breasts with salt, pepper, paprika, onion powder, and Italian seasoning.
  5. Lay the seasoned chicken on top of the potatoes.
  6. Spread the minced garlic evenly over the chicken.
  7. Pour enough Buffalo Wild Wings Garlic Parmesan Sauce to coat the chicken thoroughly.
Cooking
  1. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is cooked through and potatoes are tender.
  2. In the last 30 minutes of cooking, sprinkle shredded mozzarella cheese over the top. Cover and let it melt.
Serving
  1. Serve warm, garnished with extra Parmesan or herbs if desired.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 4 days. For longer storage, freeze individual portions and thaw before reheating. You can enhance flavors by marinating the chicken in the garlic parmesan sauce beforehand. Adjust spices based on taste and consider adding vegetables like carrots or green beans for extra nutrients.
